The Perinotti family, of the Gli Aironi brand, has been growing their rice for five generations in the Piedmont region. Their nutritional secret? They preserve the germ of the rice grain. An artisanal and gentle husking is used, which preserves the nutrients responsible for the taste and resistance to cooking of the rice.
